Made from the free-run must that emerges
from the destemmed grapes before they are pressed, this wine reveals
Vernaccias elegance and finesse. It ferments in steel and rests long on
the lees, acquiring character and a unique, long, round finish.
Food-Wine Pairings: Sole,
shrimp, whiting, brook trout, fish mousse or soufflé, chicken breast,
turkey, milk-fed veal, steamed vegetables seasoned with olive oil, and any kind
of dish with a white sauce.
